Chorizo Butternut Spirals with Red Bell Peppers

INGREDIENTS
PEDERSON’S FARMS CHORIZO
VEGGIE NOODLE CO. – BUTTERNUT VEGGICCINE
1 MEDIUM ONION, DICED
1 LARGE GARLIC CLOVE, MINCED
1 TBSP OLIVE OIL
1 RED BELL PEPPER, DICED
SALT AND PEPPER

INSTRUCTIONS
Heat skillet to medium-low heat and sauté onion in olive oil until soft and translucent. Add in minced garlic and sauté for a minute until the garlic is fragrant. Add in red bell peppers and Pederson’s Farms Chorizo. Using a wooden spoon, break up the chorizo and cook for ten minutes or until the bell peppers are soft and the chorizo is cooked through. Add in Veggie Noodle Co. Butternut Veggiccine and sauté for four minutes or al dente. Salt and pepper to taste, and enjoy!
